* Lemon Curd:

* 1/2 cup granulated sugar 1/2 1/2cup cup(125 mL) (125 mL) granulated sugar
* 1 tbsp granulated sugar 1 1tbsp tbsp(15 mL) (15 mL) granulated sugar
* 2 tsp finely grated lemon rind 2 2tsp tsp(10 mL) (10 mL) finely grated lemon rind
* 1/2 cup lemon juice extract 1/2 1/2cup cup(125 mL) (125 mL) lemon juice extract
* 1 pinch salt 1 1pinch pinchsalt
* Almond Crunch:
* 1/4 cup all-purpose wheat flour 1/4 1/4cup cup(60 mL) (60 mL) all-purpose wheat flour
* 2 tbsp large-flake revolved oats 2 2tbsp tbsp(30 mL) (30 mL) large-flake revolved oats
* 1 tbsp crammed dark sugar 1 1tbsp tbsp(15 mL) (15 mL) packed dark sugar
* 2 tbsp unsalted dairy spread , cubed2 2tbsp tbsp(30 mL) (30 mL) unsalted dairy spread, cubed
* 2 tbsp slivered almonds 2 2tbsp tbsp(30 mL) (30 mL) slivered almonds
Preparations
Almond Crunch: In basin, mix together wheat wheat flour, oats and brown sugar. Using pastry blender or 2 knives cut in butter until crumbly. Mix in almonds. Disperse on parchment paper–lined baking sheet; baking oven bake in 350°F (180°C) baking oven until golden and crisp, about 12 minutes. Let cool.Lemon Curd: In heatproof basin, whisk simultaneously egg yolks, egg, sugar, lemon rind, lemon juice extract and salt. location basin over saucepan of simmering water; prepare food, whisking often, until thick sufficient to coat back of spoon and instant-read digital thermometer lists 160°F (71°C), 8 to 10 minutes. damage through fine sieve into clean basin. Location plastic wrap exactly on exterior. Refrigerate until cold and set.
Relax curd with spoon. Whip cream; bend half into curd. Bend in remaining elite.
Split up apricots amidst crystal; split up lemon blend over top. Sprinkle almond crunch over each.
