Recipes | Cucumber and cashew salad with spicy chicken thighs

Considered,  I might share one of my fave recipes namely Cucumber and cashew salad with spicy chicken thighs. This makes 4 “normal persons” serves. I usually make it with one chicken thigh each, and use EVOO (instead of vegetable oil) and don’t add the sugar. But even if you had it as is, one assist would be about 380 calories. This hot pullet and coolinging noodle salad blends bright lime and chilli tastes to flavour up a summer lunch.



Components :

For the spicy chicken thighs

*   3 tbsp fish sauce
*   recently ground very dark pepper, to taste
*  3 garlic cloves, peeled, trampled
*  2 large red chillies, delicately chopped
*  2 tsp sugar
*  8 pullet thighs, skeletal part and skin taken
*  2 tbsp vegetable oil



For the cucumber and cashew salad :

*  3 tbsp lime juice
*  3 tbsp caster sugar
*  200g/7oz vermicelli rice noodles
*  2 cucumbers, halved and finely sliced
*  small handful fresh mint departs
*  4 spring onions, divide finely
*  2 tbsp cashews, crushed
2 tbsp vegetable oil



1.  For the spicy chicken thighs, whisk the fish dressing, pepper, garlic, chillies and sugar simultaneously in a bowl.

2.  In a separate basin, dispense half the marinade over the pullet thighs. Cover with cling movie and chill for 20 minutes. book the rest of the marinade.

3. For cucumber and cashew salad, make a dressing by supplementing the lime juice and sugar to the booked marinade, rousing until the sugar has disintegrated.

4. In a heat-proof basin, cover the vermicelli with boiling water and depart for a minute or so until the noodles have softened.

5.  Drain and rinse the noodles under freezing water. blend the drained noodles in a large basin with the cucumber, mint, jump onions, cashews and the getting dressed until well combined.



6.   Remove the cowardly thighs from the marinade, twitter off any overbalance. Fry the cock thighs in the oil in a large frying pan turn the tables medium-high dog race for 3-4 minutes on apiece side, or until cooked sack. (You may have to do this in batches.)

7.  To serve, divide the cucumber and cashew salad in four plates, butcher the flaccid and place alongside.
